If you’ve shopped at Publix for years as I have, you probably look forward to “Italian Days” (aka Viva Italia) as much as I do.  This is usually a two-week long promotion in February and in the past has been a great time to stock up on “Italian” themed pantry items like bread crumbs and beans (I hope we’ll see a sale on Progresso canned beans next week, and I really hope we’ll get a BOGO sale on Buitoni fresh-cut pasta).  But Week 1 has some terrific sales with great coupons, and I am happy to share the trip I made this morning.   My Publix accepts Winn Dixie coupons, so I used a $5/$40 Winn Dixie total-order coupon, a courtesy coupon for completing a shopping experience survey. Information about earning this coupon is at the end of every Winn Dixie register receipt. The $5 savings from this coupon is factored into the final tally.

Ok,I have no clue whats going on because I called not one but TWO Publix in my area looking for those Viva Booklets only to be told they do not have them and one lady said they would not get them until the first of March! Are they lying? Just wrong? Anyone in the Hudson Florida area find these?

    • I’m on the other side of Florida, but the display was set up so that people would almost run into it coming through the door. It’s one of those cardboard displays with pockets on the side to hold the booklets. The booklets are fairly small, maybe 6 x 8, and the display was almost empty. I don’t know if the store had any more booklets to replenish the supply (I hope so). There are six coupons inside – the five coupons that were in the Sunday inserts a few days ago plus the $1/2 Progresso bread crumbs coupon that was not included in the Sunday inserts. They must have known how hot the bread crumbs coupon would be.

  2. Ok Maureen…………Nowwwwwwwww ya gotta post that recipe for that orecchiette with rapini and sweet sausage. (or you can email it to me). It sounds delicious !!!

    • I hope you love it as much as I do!

      Orecchiette with rapini and sweet sausage

      2 lb rapini
      1 lb fresh, uncooked sweet Italian sausage (loose or remove from casings)
      3 tbsp extra virgin olive oil
      3 garlic cloves, crushed (you can use less if you don’t love garlic, but you need at least one clove)
      1/2 tsp red pepper flakes
      3 tbsp unsalted butter
      1 cup chicken stock
      1 cup grated Pecorino Romano or Parmigiano-Reggiano cheese
      1 lb orecchiette pasta
      Salt

      Bring 6 quarts of salted water to a boil in a large pot.

      While the water is heating, cut off and discard the tips of the rapini stems and large, tough leaves. If the stems are thick, peel with a vegetable peeler. Cut the rapini into 2-inch lengths, wash thoroughly, and drain in a colander, shaking to remove excess water.

      In a large skillet, heat one tablespoon of the olive oil over medium-high heat. Add the sausage meat and cook until the sausage is no longer pink, about 3 minutes. Add the crushed garlic and continue sauteing until the sausage is lightly browned, about 2 to 3 minutes.

      When the water is boiling, add orecchiette and cook according to package directions.

      Drain the sausage fat from the skillet and add the remaining olive oil. Add about half the rapini to the pan and toss it until it begins to wilt. Add more of the rapini as that in the pan begins to wilt. When all the rapini has been added, cover the pan and steam until wilted and bright green, about 4 minutes. Taste and season lightly with salt and red pepper flakes. Stir in the butter until melted, then add the stock and bring to a boil. Boil gently, uncovered, for several minutes to reduce and concentrate the liquid. Set aside until the pasta is ready.

      When the pasta is al dente, drain it well, but reserve some of the cooking water. Return the drained pasta to the pot over low heat. Add the rapini sauce and toss gently to blend. Add a ladle of the pasta cooking water if the mixture seems dry. Remove from heat. Add half of the grated cheese and toss to blend. Transfer to a serving platter or individual bowls and sprinkle with the rest of the grated cheese. Serve immediately.
